I have made this recipe multiple times since my grandma shared this recipe with me around Thanksgiving last year. It is my favorite baked pumpkin treat (PS – it is also VEGAN!)! It’s so easy to make PLUS it makes two loaves which makes it perfect to bring to family gatherings in the fall or to the office (I’ve brought it to both!). I’ll also let you in on a secret – it makes a MEAN french toast! I made some last fall for my husband with some chopped pecans on top and he approved – which he is quite the food critic, so when he approves, I’m happy!

Fresh blueberries can still be found in the grocery store (however I use frozen blueberries in this recipe most of the time since I always have them on hand for smoothies!) which makes this a perfect treat for September! If you’re not a pumpkin person, I recommend you whip up a batch of these homemade donuts which really taste great for any season! It’s August and the cool mornings and nights mean that it is time to bake with PUMPKIN!
I love making pumpkin baked goods, and this year I have taken great joy in baking my own donuts. Baked donuts at home are healthier than fried donuts, and just as delicious. I recommend you have a donut mold pan to bake with, which are fairly inexpensive. I picked up a two pack of Wilton donut pans on Amazon for $13.50 earlier this season. (Always grease your pan well when baking to make it easier to pop them out. I just give mine a good spray with canola oil)

I’m working on eating healthier by keeping away from processed foods and sugars. This easy recipe can be Whole 30 compliant too! Just modify as needed.
